All this and the promise that the food can be made fresh in front of your eyes, steamed in exactly three minutes and on your table in seconds. Such scientific precision and quality control is what makes Din Tai Fung stand out from the rest.
I wouldn’t normally queue for food (in fact I loathe the tossy no-booking policy), but I was so mesmerised by this kitchen packed with dumpling scientists creating their tasty little masterpieces that I didn’t even mind waiting outside in the freezing cold for an hour to be seated. Nothing like a dumpling (or 6) to warm the cockles of the soul on a Wintry night.
